INGREDIENTS

  • 0.5 pound of fresh wild salmon
  • 0.25 an English cucumber, seeded and diced
  • 0.5 avocado, cubed
  • 0.5 teaspoon toasted sesame seeds
  • 0.5 tablespoon cilantro
  • 0.5 tablespoon chopped chives
  • Dressing

  • 0.5 teaspoon grated ginger
  • 1 tablespoon lime juice (1/2 a lime)
  • 1 tablespoons coconut aminos
  • 1 tablespoons toasted sesame oil

INSTRUCTIONS

  • Cube your salmon and dice your cucumber and avocado and place into three separate bowls
  • Whisk together your dressing and toss with cubes salmon
  • Using a stainless steel food tower mold, place cucumber and avocado in layers, adding salmon last
  • Garnish with cilantro, toasted sesame seeds and chopped chives
