INGREDIENTS

  • 1 lb ahi tuna steak
  • Salt and pepper
  • 0.5 tbs toasted sesame oil
  • SALAD

  • 0.5 English cucumber
  • 0.25 cup cherry tomatoes
  • 0.5 mango
  • 0.5 avocado
  • DRESSING

  • 1 packed cups cilantro
  • 1 tablespoons rice wine vinegar
  • 1 tablespoons coconut aminos
  • 1 tablespoons lime juice (half a lime)
  • 0.5 teaspoon honey
  • 0.17 cup toasted sesame oil
  • Blend all ingredients in a vitamix, adding sesame oil last and gradually to emulsify

INSTRUCTIONS

  • Cut tuna steak into 1.5 inch thick strips
  • Salt and pepper each side 
  • Over medium high heat add 1 tablespoon sesame oil to a cast iron pan
  • Add tuna strips and sear each side for 30 seconds to 1 minute
  • Set aside
  • Halve and chop cucumber
  • Halve cherry tomatoes
  • Dice mango
  • Dice avocado
  • Toss with cilantro vinaigrette and set aside
  • Slice tuna into slices
  • Arrange on a plate 
  • Garnish with toasted sesame seeds and LWI sugar free pickled onions
