INGREDIENTS

  • 0.5 red beet
  • 0.5 golden beet
  • 1 large carrots
  • 0.25 jicama
  • 0.5 apple (honey crisp or Fuji)
  • 0.13 cup fresh mint leaves
  • 0.13 tsp flaky sea salt
  • Apple Cider Vinaigrette

  • 1 tbsp apple cider vinegar
  • 1 tbsp lemon juice (1/2 lemon)
  • 0.5 tbsp fresh orange juice (1 large wedge)
  • 0.5 tbsp Dijon mustard
  • 0.5 tsp honey
  • 0.5 tbsp stone ground mustard
  • 0.13 cup olive oil
  • Whisk all ingredients together, adding in olive oil last and gradually to emulsify

INSTRUCTIONS

  • Wash and peel beets, carrots and jicama
  • Using a food processor with fine grate blade attached, grate beets, carrots and jicama
  • Using a mandolin, thinly slice apple and dice into matchsticks
  • Combine all grated veggies, apple and mint and toss with Apple Cider Vinaigrette and sea salt
