INGREDIENTS

  • 0.5 lb of lobster meat (tails, claws, whatever you have)
  • 1.5 celery stalks
  • 1 tablespoons chopped chives
  • 1 tablespoons lemon juice (1/2 lemon)
  • 0.5 tablespoon orange juice (1 large wedge)
  • 1 tablespoons dijon or stone ground mustard
  • 1 tablespoons olive oil
  • Fresh cracked black pepper

INSTRUCTIONS

  • Whisk together mustard, citrus juices and olive oil, adding in olive oil last and gradually while whisking to emulsify into a creamy vinaigrette 
  • Add chopped chives and celery to vinaigrette 
  • Chop lobster into bite size pieces and toss with vinaigrette
  • Garnish with fresh parsley, black pepper and LWI pickled onions (optional)
