INGREDIENTS

  • 1 head of Bibb lettuce
  • 2 cups watercress
  • 0.5 cucumber, thinly sliced
  • 0.5 watermelon radish, thinly sliced
  • 0.5 fennel bulb, thinly sliced
  • 1 grapefruit, peeled and sliced into wedges
  • 1 clementine/mandarin/orange, peeled and sliced into wedges
  • 0.25 cup sprouted walnuts
  • Mint leaves for garnish
  • Citrus Vinaigrette

  • 0.25 cup lemon juice (1 lemon)
  • 2 tablespoons freshly squeezed orange juice (2 large wedges)
  • 2 teaspoons raw unfiltered honey
  • 2 tablespoons dijon mustard
  • 2 tablespoons stone ground mustard
  • 0.5 cup extra virgin olive oil
  • Directions - whisk together ingredients, adding in the olive oil last and gradually to emulsify into creamy vinaigrette

INSTRUCTIONS

  • Arrange salad on a large plater, beginning with bed of Bibb
  • Add watercress, sliced fennel, cucumber, radishes, grapefruit and mandarine slices
  • Drizzle with vinaigrette
  • Garnish with crushed sprouted walnuts and mint leaves
