INGREDIENTS

  • 0.5 Chickpea pizza crust
  • Simple Tomato Sauce

  • 1 tablespoons olive oil
  • 1 cups cherry tomatoes
  • 0.5 shallot, thinly sliced
  • 0.5 minced garlic clove
  • 0.5 teaspoon dried oregano
  • 1 tablespoons fresh basil (or 1 teaspoon dried)
  • 0.5 tablespoon balsamic vinegar
  • Sauteed Vegetables

  • 0.5 tablespoon olive oil
  • 0.25 cup skitake mushrooms
  • 0.5 shallot thinly sliced
  • 0.25 cup halved cherry tomatoes
  • 0.13 cup halved kalamata olives

INSTRUCTIONS

  • Preheat oven to 400

Tomato Sauce

  • In a lidded saute pan, add 2 tablespoons olive oil and heat to medium-high
  • Add sliced shallots and garlic and cook for 2 minutes until fragrant
  • Add basil and oregano and cook for an additional minute
  • Add tomatoes and lid and cook for 6 minutes
  • Remove lid and stir in balsamic vinegar
  • Transfer to a blender and pulse until sauce forms

Sauteed vegetables

  • In a cast iron skillet as 1 tablespoon olive oil and turn to medium-high heat
  • add mushrooms, shallots and tomatoes and sauce for 5 minutes
  • Stir in kalamata olives
  • Transfer to a bowl and set aside

Pizza

  • Apply sauce to pizza crust
  • Top with sautéed vegetables
