INGREDIENTS

  • 0.25 onion (red, white or yellow)
  • 0.25 jalapeño
  • 0.5 bell peppers (red, orange, green or yellow)
  • 0.5 carrots, peeled and chopped
  • 0.5 tbsp extra virgin olive oil
  • 0.5 lbs ground turkey, beef or chicken (if going plant based, double up on beans below)
  • 4 oz black beans
  • 4 oz red kidney beans (or pinto)
  • 0.5 tbsp chili powder
  • 0.25 tbsp Italian seasoning
  • 0.25 tsp cumin
  • 0.25 tsp smoked paprika
  • 0.25 tsp finely ground black pepper
  • 0.5 tsp salt
  • 1 minced garlic cloves
  • 0.25 tbsp Worcestershire sauce
  • 0.5 cups chopped tomatoes (or 1 jar of tomatoes)
  • 1.5 oz tomato paste
  • 0.5 cups broth (vegetable, chicken, beef, or bone)

INSTRUCTIONS

  • Chop onion, peppers and carrots
  • Using the Instant Pot, turn on by hitting sauté for 5 minutes
  • Add in olive oil and chopped onion, peppers and carrots
  • Sauté while stirring frequently for 5 minutes
  • Add in ground turkey, chicken or beef and sauté for 5 additional minutes
  • Add in all other ingredients, stir to combine and close lid making sure vent is sealed
  • Hit pressure cook for 20 minutes
  • Release pressure (carefully!) after 20 minutes
  • Serve immediately or use keep warm setting (it gets even better with time)
  • Garnish with fresh cilantro
